Genius Hub is a recruitment firm that specializes in talent search and placement of highly skilled individuals. We are looking for a highly motivated and knowledgeable individual for our client as Chef.
Summary
Our client in a leisure and hospitality business is looking for a self-motivated and qualified Chef with experience. He/ She will be reporting to the Hotel Manager. The main duties and responsibilities of a Chef will include the following;
Key Responsibilities
- Take full control and guide the team through the food preparation process and any other related activities;
- Construct a menu with new or existing culinary techniques and trends to create good quality food, ensuring there is always a fresh and exciting variety;
- Approve and finish every dish that leaves the kitchen before it goes out and is put in front of the customer;
- Plan orders for ingredients on a daily, weekly, and monthly basis;
- Control stocks to ensure there is minimum out-of-date issues and stock items are used up in time;
- Plan orders for equipment so the kitchen always runs smoothly and effectively;
- Arrange repairs and general maintenance when necessary;
- Motivate, discipline, manage and train the kitchen staff;
- Oversee the general work of subordinates;
- Estimate the staff’s workload and roaster shifts accordingly;
- Maintain records of attendance and keep track of leave due;
- Comply with nutrition and sanitation regulations and safety standards;
- Be a team player who creates a climate of cooperation and respect between co-workers that has the desire to do their best.
- Responsible for all the food orders, storeroom, fridges, and deep freezers and maintain supplier information;
- Ensure that the facility’s reputation for excellent food and excellent service is enhanced;
- Evaluate guest’s complaints and compliments and implement resultant diagnosis;
- Ensuring that consistency in food costs by maintaining accurate records of all the foods ingredients used in the restaurant;
- To be conversant with, execute and serve buffet and a la carte menus forecast food production accurately.
- Aid the recruitment and management of all kitchen staff.
Qualifications
- Must at least hold a Diploma in the related field. A Bachelor is an added advantage;
- Proven experience as an executive sous chef or head chef with 10 years of experience;
- Proven ability to manage a busy kitchen;
- Ability to delegate responsibilities of thoroughly monitoring the food prep process;
- Excellent communication skills with knowledge of continental, Indian, and Asian cuisine;
- Excellent leadership skills;
- Up to date with culinary trends and cooking techniques that can optimize the kitchen process;
- Good understanding of the health and safety requirements of a busy kitchen;
